Sub:-  Microbiological data from hotels / Catering establishments

Dear Member,

The Food Safety and Standards Authority of India (FSSAI) established under the provisions of Food Safety and Standards Act, 2006, is  mandated to lay down science based standards for  food products and to regulate their manufacture, storage, distribution, sale and import as well to ensure availability of safe and wholesome food for human consumption.

FSSAI is in the process of developing microbiological criteria including Process Hygiene Criteria and Food Safety Criteria for catering establishments. The Scientific Panel on Biological Hazards is looking for scientific data related to hygiene status of food contact surfaces such as tables, cutting board, instruments, operators palm under GHP/GMP conditions. Therefore, we request you to kindly provide the data on monitoring of hygiene by microbiological testing.

Also, if you could arrange data on microbiological levels achievable under GHP/GMP in cut salads, grilled vegetables and cooked food items.

Looking forward to receiving your reply at the earliest, as we need to forward this information to FSSAI.
