SUB: FSSAI CLARIFICATION ON MENU LABELLING FOR HOSPITALITY SECTOR
Dear Member,
This is to inform you that FHRAI had sent a representation to the Food Safety and Standards Authority of India (FSSAI) on 9th August 2022, thereby requesting an exemption for the buffet meals served by food service establishments from Menu Labelling compliance of FSSAI. The copy of the representation is attached for your reference.
Taking cognizance of our letter, FSSAI has come out with a clarification that
buffet meals provided by event caterers or only when they have been served for less than 60 days in a calendar year are exempted from the provisions of Menu Labelling. However, buffet meals served by the Hotels & Restaurants across the year are not exempted from the provisions of the regulations and need to comply with the same.
FSSAI has also clarified that although there is no fixed serving size for the dishes served in buffet meals and the consumer decides the same itself, the Hotels & Restaurants may always declare the calorific value and nutritional information, in a fixed quantity or serve of a dish such as per 100 grams or 1 bowl. It is also pertinent to mention that the regulation also allows deviation / variation of 25 per cent with regards to nutritional information declarations.

Kindly refer to your letter No. Nil dated 09.08.2022 regarding exemption of buffet menus from the provisions of Menu Labelling. In this context, it is clarified that buffet meals provided by Event caterers or only when they have been served for less than 60 days in a calendar year are exempted from the provisions of Menu Labelling, however, buffet meals served by the Hotels & Restaurants across the year are not exempted from the provisions of the regulations and need to comply with the same.
Further, although there is no fixed serving size for the dishes served in buffet meals and the consumer decides the same itself, the Hotels/Restaurants may always declare the calorific value and nutritional information, in a fixed quantity or serve of a dish (say, 100 grams or 1 bowl). In addition to this, the regulation also allows deviation of 25 percent in case of nutritional information declarations.
